It’s Elderflower season and we’re making our own cordial.
All you need is:
- 20 heads of elderflower
- 1.8 kg Fairtrade sugar
- 1.2 litres water
- 2 unwaxed lemons
The method:
- Put all the ingredients into a pan with the water and bring up to the boil, stirring until the sugar has completely dissolved.
- Cover with a cloth and leave at room temperature for 24 hours.
- Next day, strain the cordial through a sieve and pour into thoroughly cleaned recycled glass bottles and store in the fridge.
Use as a cordial with sparkling water and a slice of lemon or experiment a little and add some garden mint and lemon vodka for something a little more sprightly.
A truly satisfying seasonal liquid experience.
